Ok, so it's January 3rd and I have been working on my Eat From the Pantry Challenge that I read about on the blogs, Money Saving Mom and Life as Mom. We have done pretty good so far (yeah I know, it's only the 3rd) and plan to keep it up!

Friday 1/1/10 - this day was easy because I was in bed with a migraine most of the day (blogging from the laptop) - it was one of those that affects everything and so I did not want to eat anything. Amanda and Doug just had whatever was in the fridge during the day. When I felt like eating around 4pm, Doug made me an omelet and toast. Amanda and her boyfriend made chicken and pasta for dinner for the three of them. They said it was yummy so maybe I will be recruiting them to cook more often!

Saturday 1/2/10 - it was sooooo cold outside that I just ran a couple of errands and then stayed in! I made pancakes for breakfast and Nachos for a late lunch. We really weren't hungry for dinner so we just snacked on cheese and crackers, clementines, etc. Amanda's friend Ninette slept over and they made a frozen pizza. We played Sequence and it was a very nice night in from the cold.

Sunday 1/3/10 - today was a bit tougher but we made it through. As I said in my previous post, I picked Alex up early today and we ran to Walgreens then home to wake everyone up to get ready for church. Well, we ended up not eating breakfast (except for my coffee which is a must or no one likes me!) before leaving. If we do this usually we will go to lunch after church but not today! We ran to the two Walgreens I told you about then to Jewel (I will post that info tomorrow) to get the things we need for Amanda's school lunch and our lunch today. We were so hungry that it was super hard not to buy everything in the store! So, we quickly picked up what we needed and ran home to make lunch. It was yummy too! We made meatball subs - free meatballs from the Jewel freezer deal, French rolls bought today and fries from an Ore-Ida deal a while back. It was worth the wait. I did defrost chicken for dinner but no one was hungry for dinner so we ended up not eating. Doug had a ham sandwich later using our free Target ham.

Here is the menu I have made up for the rest of the week:

Monday 1/4 - Italian chicken (chicken and Italian dressing in the crockpot), salad and mashed potatoes, veggies

Tuesday 1/5 - Spanish Pork Chops (1 chicken breast), Spanish rice & beans, corn & green beans -- oh, this is one of our favorite meals!! :-)

Wednesday 1/6 - BBQ beef (1 chicken breast), carrots, potatoes, salad

Thursday 1/7 - Amanda's birthday - dinner out

Friday 1/8 - Pizza & salad - crazy night of activities

Saturday 1/9 - Chicken chili & corn bread for lunch and Burgers with a Three-Cheese Noodle bake for dinner (this noodle bake is my new recipe I am trying for the week)

It's actually very nice to have this planned out so that I can defrost the meat early enough and I made sure I have everything on hand. I hope I have inspired some of you to look in the pantry and freezer and see what you can make for dinner! :-)
