I just read on Jill Cataldo's site that there is a new Catalina deal running at Meijer from 1/25-2/21.

I did this last year with the seasoning packets. It was reported that the seasoning packets are on sale through Wednesday, 1/27 for $.50 each so this would be a good deal! What I usually do is go through the self check-out and buy the Old El Paso items first then use the cat on the next order which is my beef or chicken! :-)

I'm going to try to go in the morning because we could use some refried beans and it would be nice to have something other than chicken or burgers which is what I have left in my freezer!

I have to tell you about dinner tonight - it was good! It was a recipe that you could easily use any leftover meat you have in the fridge and a few potatoes! Here is the recipe:

Turkey and Potato Pan Fry

2 tbsp olive oil
14 oz. turkey breast fillet, diced
3 tbsp butter
1 lb., 4 oz new potatoes, scrubbed and sliced
6 shallots, peeled and halved
1 large red pepper, seeded and chopped
1 tbsp fresh finely chopped chives

Heat half the oil in a large heavy-based frying pan and fry the turkey pieces for 4-5 minutes until browned all over. Remove with a slotted spoon and set aside.

Add rest of oil, butter, potatoes and shallots to the pan. Cover and cook over a medium heat for 15 minutes, stirring occasionally, until the potatoes are almost tender.

Return the turkey to the pan and add the chopped red pepper. Season with salt and freshly ground black pepper and cook uncovered for 10 minutes, until the potatoes are golden and the turkey is cooked through. Serve garnished with finely chopped chives.

I diced the turkey breast and since it was already cooked, I just browned it in the pan, removed it and continued with the recipe as is.
I did not have new potatoes or shallots and since this is a cooking from the pantry challenge, I used a few russet potatoes and half of a large onion I had on hand.
Whenever I use peppers in recipes, I usually have some of it left over so I will vacuum seal it and toss it in the freezer for another day. I had green and yellow peppers in the freezer so I used those instead of the red.

This was super easy and everyone liked it. I would like it to have had a bit more color so I will probably add some red pepper and maybe some zucchini next time. We had some free Green Giant veggies and some almost free Pillsbury French rolls to round out the meal. This afternoon, Amanda made some Friendship bread muffins and we had those for dessert. Yummy night. :-)
I hope you guys try this recipe when you have some leftover meat and a few potatoes in your fridge.
