My October challenge

I have decided to give myself a challenge for October. I have decided that we are going to live off our fairly large stockpile in October. There are a couple of reasons that made me make this decision - first, we are going on vacation in November so I need to try to be a bit more strict on our spending for next month or so. Second, I have come across a few things that are expiring soon and I need to use some of it up so this is the perfect time! I will be looking for some new recipes to try out and some creative ways to use what we have. I will still do my shopping for all of the deals out there but my goal is to have my oop be as low as possible for the next month. I will post throughout the month how it's going and hopefully I can inspire some of you to use up what you have in your full freezer and pantry!


Day 1
I have started by taking out some boneless pork ribs (bought super cheap) that I will throw in the crockpot in the morning with some bbq sauce (got free). I took out some buns from the freezer (got free) and we will have bbq pork sandwiches. I also have over 10 pounds of potatoes (cost about $1) that I need to use up so I am going to make some of Alex's favorite potatoes which are super easy! I just peel and slice them, put them on a cookie sheet (sprayed with Pam), top with a little butter on each slice, sprinkle with garlic powder and Parmesan cheese and bake at 350 degrees for about 40 minutes. I will make some of the free Green Giant veggies that are in the freezer. Of course, I will have to make a chicken breast for Amanda since that is the only meat she eats. We will have a nice meal for next to nothing! :-)
